Gnocchi di patate


  • 1 kg of potatos
  • 300 gr of flour
  • 1 egg
  • salt as needed


After having washed the potatoes, boil them into water. Skin, sieve and work them into the flour with a egg and salt untill the mixture becomes spongy. Spread a bit of flour on the work top in order to avoid that the mixture gets stuck.

Now make some little "snakes" (about 2 cm high), cut them into pieces about 3 cm large and roll them fast with the help of a cheese grater.

As the salted water boils, put the gnocchi in and pick them up with a strainer as soon as they come up.

Serve them with a good tomato sauce and Parmesan cheese.
